Sunday Treat...Cinnamon Apple Cake! Easy and yummy!!

Now that I am living in the back of beyond...I dont have much of a choice in matters of fresh fruits and veggies and herbs... (oh how I miss strawberries and blueberries!!)
oh well....
So we make the best of whats available to us... and especially for the Armed Forces- we have to make the best of what comes seasonally in the Army Rations!
Last month in November we were inundated with apples and this month has been oranges and yet more oranges.
so last month I made a lot of yummy treats with apples... didnt get time to put them up so they will be coming up on my blog by and by...
right now is the time for one the MOST delicious cakes I have had in a looooong time!

And now I have to go rack my brains on what exotic things can I make with oranges...
any suggestions?



APPLE CINNAMON CAKE with brown sugar crunch!
The cake is extremely moist and melt in your mouth while the brown sugar topping provides the yummy crunch which takes the cake to a whole new level.



Ingredients: 

3 cups flour (half whole wheat and half all purpose flour-maida)
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
(sift them together and set aside)

 2 eggs
1 cup oil- 
(I used the normal vegetable oil, you can also use olive oil to up the health quotient.)
1+ 1/3 cup sugar
1 tbsp vanilla essence
3 apples peeled and chopped into not too small pieces.
about 1/4  cup brown sugar for topping
(you get brown sugar in most gourmet stores otherwise you can use the normal sugar for topping)

STEPS:
1- Preheat the oven to 160C or 350F
2- beat the eggs at medium speed. add oil and sugar and beat till nice and creamy- add the vanilla essence. and beat till nicely mixed.
3- Add the dry flour ingredients that you have set aside after sifting, to the wet ones and mix well with hand till nicely combined.
the batter is going to be quite unlike the other cake batters, i.e its going to be very thick and heavy and you are going to have a tough time mixing it all together.
But dont worry- the cake comes out just lovely!
4- Add the diced apples to the batter and mix.
5- Pour the batter into a greased and dusted pan and level it with the spatula.
6- Sprinkle the brown sugar on top and put in the preheated oven.
7- Bake for 50 minutes to one hour.


The cake with the sprinkle of brown sugar on top!




Nice and brown...




Slice up....



And enjoy!
